While most extra virgin olive oil takes around 4-5 pounds of olives to yield one pound of oil, our Greek estate-grown oil takes between 9-10 pounds of fruit for the same yield. We use young, fresh green olives that are chock full of antioxidants and polyphenols; while 99% of the extra virgin olive oil on the market uses oxidized, rotted, acidic fruit because of the larger oil yield.
This specific harvest totes 430 mg of antioxidants per liter, while the market standard is fixed at around 50 mgs. More antioxidants also mean a significantly longer shelf life!
